A Culinary Journey
In December 2023, the story of our first dish at Demain began with an idea on paper: the combination of artichoke and roasted onion. What began as a brainstorming session with the team quickly evolved into an intensive testing period. Our intention was not just to present a dish, but to develop a culinary style that would describe the essence of Demain.
"Personally, I have always been fascinated by Mediterranean cuisine because of its warmth and diversity. We aimed to develop a style beyond just Spain or Italy, taking inspiration from different regions and combining it with local products."
During the testing period, we carefully perfected what would eventually become our opening menu. Everything fell into place except for one dish: the artichoke. We had a sauce, a cream, something crunchy, but it lacked cohesion as a whole.
The night before the opening, the pressure was palpable; we knew the dish had to be perfect. The artichoke remained the missing puzzle piece. After a night of reflection and brainstorming with the team, suddenly everything clicked. The dish had to exude simplicity without compromising on quality. Abstraction became the key to our success.

These are the core values that characterize Demain's cuisine and defined our first dish. The dish with artichoke, roasted onion and Jerusalem artichoke has since won a permanent place on our menu, as a symbol of what our cuisine represents.
